It was the day after her birthday. We hadn’t used her number 7 candle she received from a lady in our church who remembers EVERY child’s birthday with a card and a little surprise. This year the surprise was candles – the number ones. I had told Paige that we would use it for her birthday party with her friends. She wasn’t convinced we should wait and we should use it TODAY! (Insert here: Parenting Rule Number One – Don’t let the kid have their own way) That resulted in us making a lemon meringue pie. (What Parenting Rule?) Just so she could use her candle. Lemon Meringue Pie. The most complicated recipe in the history of desserts and cakes ever made in my house. Lemon Meringue Pie – what was I thinking? Even the eggs knew I wasn’t totally into using the candle today. They refused to do their thing – so we ended up with flat – overly sweet meringue on top. Thermomixers out there – DO NOT use the recipe on the Thermomix forum rated as the best. It is not the best.
But it was tangy. And we love tangy around here.
