My Creative Space {fresh and an oldie, but a goodie}

It was Lachlan’s turn to cook last night.  Easy Spaghetti Bolognese with spinach and basil pesto.  It was delish.

Spinach and Basil Pesto

Ingredients:

a handful of basil leaves (no stalks)

a handful of spinach leaves (no stalks)

quarter cup pine nuts (or cashews work well)

quarter cup extra virgin olive oil

Method:

wash and dry basil and spinach

place all ingredients into Thermomix, blender or food processor

blitz until fine.  you may need to scrape down the sides of your bowl to get the texture consistent. we like chunky.

place a spoonful of the pesto on top of spag bol.

devour.

  1. That looks divine! I’ll definitely be trying it. And isn’t it amazing how babies and kids just seem to know where to find the nearest mud or puddle! (But a very cute photo!)
