this week :: in the kitchen

been cooking up a storm, using inspiration from fellow bloggers..

IMG_3465{gingerbread thermomix recipe from Em}

Made these little gingerbread farmers for Lachlan’s class.  The year fives at the kid’s school are in charge of the school farm, and so for the farm lunch, the gingerbread men had to be wearing gum boots.

Prezzies for Chiara’s teachers this year.  They are three wonderful people.

We had our street christmas party last night and I needed to bring a salad to share.  It was delicious.  Try it!

and finally… IMG_3443

Made these for snacking on…  mmmm, there’s rum in them!

sourdough starter {chapter one of hopefully a very long and epic adventure}

DSC_0488so I am the proud new owner of a few cups of sourdough starter.

lovingly gifted to me, in a cooler bag, with a bag of feed flour, a long list of care notes and a thermo recipe.

today I started the process of making a loaf.

took some of the starter, added flour, water and salt and let Thermie do it’s thing.

after a quick knead, the dough is in the fridge, to rise overnight.

the starter was fed to keep the process happening and is now back in the fridge till the next time I want to make a loaf.

this will be a learning curve for me.

i subscribe to the jamie oliver cooking method most days.  fast and fresh.

a lot of love goes into my cooking, but not a lot of forethought.

this is all about forethought.

lets hope it’s worth it.

in the kitchen {easy peasy apple pancakes}

{easy peasy pancake recipe to whip up as an afternoon snack, or for breakfast.  My kids are always starving and, as we eat dinner at seven, I am quite happy to oblige them with something nice after school}

Easy Peasy Apple Pancakes

1 cup plain flour

1 cup sr flour

2 apples, quartered and cored

1 tbsp butter (no need to melt, just throw it in with the rest of the ingredients)

1/2 tsp cinnamon

1 tbsp raw sugar

1 tsp baking powder

1 pinch salt

2 eggs

2 cups milk

Here’s the easy bit:

1. Put all the ingredients into a blender or into your TMX bowl and blitz until there are no lumps.  The apples should look finely grated.

2. Heat up a frying pan/ or electric frypan on medium heat, melt some butter and wait for it to sizzle a bit.

3. Use a quarter cup measure to pour mixture into the pan.

4. Spread mixture, wait for bubbles to appear and for the edge to go golden brown. Flip!

5. Wait about 10 seconds (will depend on your cook top) and serve onto a plate.

6. Serve with either lemon juice or some extra raw sugar (only need a little bit)

Pancakes are a favourite snack or breakfast around our place.  We’ve made banana, sultana, blueberry…  What else could we try? What’s your favourite pancake flavour?
