in the kitchen {easy peasy apple pancakes}

{easy peasy pancake recipe to whip up as an afternoon snack, or for breakfast.  My kids are always starving and, as we eat dinner at seven, I am quite happy to oblige them with something nice after school}

Easy Peasy Apple Pancakes 

Ingredients:

1 cup plain flour

1 cup sr flour

2 apples, quartered and cored

1 tbsp butter (no need to melt, just throw it in with the rest of the ingredients)

1/2 tsp cinnamon

1 tbsp raw sugar

1 tsp baking powder

1 pinch salt

2 eggs

2 cups milk

Here’s the easy bit:

Method:

1. Put all the ingredients into a blender or into your TMX bowl and blitz until there are no lumps.  The apples should look finely grated.

2. Heat up a frying pan/ or electric frypan on medium heat, melt some butter and wait for it to sizzle a bit.

3. Use a quarter cup measure to pour mixture into the pan.

4. Spread mixture, wait for bubbles to appear and for the edge to go golden brown. Flip!

5. Wait about 10 seconds (will depend on your cook top) and serve onto a plate.

6. Serve with either lemon juice or some extra raw sugar (only need a little bit)

Devour!
